White Labs Launches STA1 Negative Saison Strain

SAN DIEGO (February 17, 2020) – Global liquid yeast and fermentation company, White Labs, is launching a new STA1 negative saison Vault Strain—WLP561 Non STA1son Ale Yeast. The strain is a blend of two STA1 negative strains that produce a saison-like fermentation profile with medium-to-light phenolic characteristics depending on the fermentation temperature.

“Many breweries got a scare due to recent genetic findings that some of the long-proven traditional strains carry the STA1 gene,” said Troels Prahl, vice president of innovation & European operations at White Labs. “The STA1 gene can in some cases be related to enzymatic activity with the release of fermentable sugars post the mashing process with hyper-attenuation as a result, which is not always wanted.”

Adding this strain to their offerings allows breweries to make saison-style beers without introducing STA1 strains into their brewhouse, which some breweries like to exclude from their facility to minimize the risk of cross-contamination between beers sharing the same equipment from one batch to another.

White Labs Brewing Co. commercial trials and sensory panel identified fruit-like notes from this strain ranging from lemon and tropical fruit to chamomile, as well as an array of spice-like phenolic driven aromas like pepper, clove, and coriander.
