Clarity-Ferm, made with Brewers Clarex, has a significant impact on the appearance
of your finished beer. To determine the significance, White Labs
customer service associate John Carroll brewed a 10 gallon batch of
American wheat with blackberry extract, and split the batch in two,
using Clarity-Ferm in one batch and no enzymes in the second batch.
Original gravity was 1.040 and final gravity was 1.010
At the
National Homebrewing Conference in Minneapolis in June 2010, John
opened the bottles for the first time. One bottle had beer made with
Clarity-Ferm (in the picture below, the glass is at left) and one
without (right glass). A video of the
demonstration is also available (see link above). The beer
made with Clarity-Ferm had better head retention, several
observers noted. But the main impact is
appearance-related. The overall
results, to us, are "clear."
