Thank you for providing the QC day promotion. I was very
pleased with my results except for my VDK levels. I am using the
English ESB yeast and a characteristic of the strain is high levels
of VDK. I am curious what you would recommend for a proper VDK rest
(temperature and duration).
The English yeast is so flocculent that it settles out with
VDK still in solution. The best way is to
rouse the yeast 1 day after terminal gravity, a slight amount of CO2
in the bottom of the tank will do that. If you are
not able to do that, at least leave the beer on the yeast for 2-3
days post terminal gravity, then collect the yeast and lower the
temperature or transfer.
